Bouillon is a nice little village in the south of Belgium. The main-language is french and not every pub-owner speaks english. However, you should not run into problems in the youth-hostel or in hotels. Bouillon is located about 10 km north of the french border, 150 km southwest of Liege and 200 km south of Brussels. Bouillon has a big castle located on a very big rock surrounded by the river Semois. At the foot of the rock is a promenade with several restaurants, shops, pubs and take-aways. Bouillon has plenty of accomodations and it should be no problem to get a room or a pitch for a tent there. However, the hike will take place at some time in the main-season and you should book your room in advance a couple of weeks, or better, some months before. The Semois river valley is well known for its great outdoor sporting opportunities. The valley is actually almost a "gorge": a meandering narrow valley with steep sides, cut 100 meters deep into a plateau, with a slight hint of some mild rapids in the river here and there.
